Stuffed Lake Michigan Whitefish

2 cups leftover or fresh made mashed potatoes (mashed with butter and milk)
¼ cup chopped onion
¼ teaspoon minced roasted garlic, jarred or fresh
¼ teaspoon dried or fresh dill weed
White pepper and salt to taste
Mix all ingredients together. Will be a little dry. That’s okay.

Take approximately a 3# Lake Michigan Whitefish scaled and dressed. Fill with the potatoe mixture. Lay fish in foil lined baking dish. Put a couple of pats of butter on top of fish. Pour 1 cup milk over. Bake in a 375° for 30 minutes covered loosely with foil. Bake an additional 15 minutes uncovered. Let rest covered for 5-8 minutes.
